Banana bread raw ice cream…yummmm!!!

So I came in all hot and sweaty from working outside and was really needing some ice cold and creamy banana ice cream but wasn’t really wanting my normal cacao recipe. Then it hit me…banana bread! Super quick and ended up being a great change up and really yummy. Here it is:
4 banana’s (amount is up to you)
1 1/2 tsp cinnamon
1/4 tsp vanilla extract
1 tbsp water
soaked/raw walnuts
Blend first four ingredients in a vitamix or other high powered blender until soft serve consistency. I always need to take off the top and give a good stir because pieces of frozen banana can get lodged, plus make sure to use the tamperer to help it into the blades. Spoon the ice cream into a bowl and top with the walnuts and even some soaked raisins.
I love this recipe because its super easy to digest and I’m able to go right back outside and get back to work, even if I really dont want to get back to work

The amount of soaked walnuts (any nuts do nicely actually) used is really up to your taste and/or protein and fat needs. I really just rough chop a small handful, my hands are small already ;-), and toss them on top. I personally soak my nuts overnight but I’ve read that 6-8 hours is sufficient. I always use frozen bananas as opposed to freezing it afterward so that I get that creamy softserve texture that I love but it is important that you use a highpowered blender, like vitamix, and depending on how hard your freezer gets the bananas you may need to let them sit in the blender about 10 minutes to make it easier. I also found that you do need to use the tamperer and sometimes even stop the process to mix it up with a spoon and then blend again. You can really let your imagination go with the basis of this recipe since its a base of bananas and do banana cacao or banana cacao nut butter. Hope you like it!
